Chicken and Sweet Potato Salad
Ingredients:
- 1/2 bag of fresh spinach
- 1 cup sweet potato, cubed and cooked (I buy the packaged sweet potato cubes and steam 1/2 the bag for 5 minutes. It saves some precious time.)
- 1/2 rotisserie chicken
- handful of fresh basil, ripped into bite size pieces
- 1/2 avocado, cubed
- handful of cherry tomatoes, halved
- a little freshly grated parmesan on top
Dressing:
- 1/2 juice of one lemon
- 1 tsp brown mustard
- 1 T EVOO
- sea salt and ground pepper to taste
