(Mostly) Paleo Pizza Bake

1# ground beef or sausage
1/2 yellow onion, diced
1 cup pizza sauce (I use TJ’s brand)
1 yellow bell pepper, sliced
10-15 pepperoni slices (preferably nitrate-free)
3 eggs, whisked
12 ounce bag of broccoli slaw (again from TJ’s)
sea salt and pepper to taste
1 tsp oregano
1 cup mozzarella cheese (Not needed, but tastes great!)

Steam broccoli slaw in microwave for approx 3 minutes and add to greased 8X8 pan.

Brown beef (or sausage) in pan with onions until meat is cooked through.
Add pizza sauce.
Add mixture to broccoli slaw and mix well to combine flavors.
Next add in your pepperoni and peppers (or any of your favorite pizza toppings).
Add in the egg and cheese and mix well.

Cook at 350F for 45 minutes.  Makes 4 servings.

This is definitely kid approved!  It also fills the Paleo void when craving some pizza.
