Cranberry, Walnut, Orange Muffins *Paleo

2 cups cashew flour
1/4 coconut flour
1/4 t sea salt
1/4 t baking soda
1 egg
1/4 c coconut oil, melted
1/4 c honey
1/4 c almond milk
1/2 c walnuts
1/2 c dried cranberries
Zest of one orange

Mix all dry ingredients in bowl.
Mix all wet ingredients in small bowl and then add to dry. Mix well.
Fold in walnuts, cranberries and orange zest.
Spoon into lined muffin pan. Bake at 350F for 18-20 minutes.

Makes 12 muffins.
