Chicken, Shrimp & Andouille Gumbo *paleo*

Ingredients~

4 chicken thighs, cooked and shredded
1 # raw, deveined shrimp
3 andouille sausages, sliced
2 stalks celery, diced
1 yellow onion, diced
1 red pepper, diced
3 cloves garlic, minced
2 T EVOO
1 tsp cayenne
1 tsp oregano
1 tsp paprika
sea salt and pepper to taste
1 handful fresh parsley
4 cups chicken broth
3 T tomato paste
1 head of cauliflower, riced

In large stock pot, add EVOO, celery, onion, red pepper, and garlic.  Saute for 3 minutes.
Add spices and saute for 2 minutes.
Next add tomato paste and broth.  Bring to boil.
Turn to simmer and add shredded chicken and sausages.  Cover and cook for 5 minutes.
Add shrimp and cook for another 5 minutes.

Serve with riced cauliflower to keep it paleo!wpid-IMAG0056_1.jpg
