2 sweet potatoes, cooked and mashed
dash of cayenne
1 cup spinach, diced
sea salt and pepper to taste
1 cup sausage, cooked
Next whisk eggs, cayenne, salt & pepper, and spinach in bowl and pour on top of “crust”.
Crumble sausage on top of egg mix and bake at 350F for 30-35 minutes until eggs are set. Let sit for 5 minutes and serve.
