Sweet Potato Crusted Quiche Experiment *paleo*


2 sweet potatoes, cooked and mashed
6 eggs
dash of cayenne
1 cup spinach, diced
sea salt and pepper to taste
1 cup sausage, cooked

Mash sweet potatoes and form to bottom of greased pie plate—>wpid-IMAG0047.jpg

Next whisk eggs, cayenne, salt & pepper, and spinach in bowl and pour on top of “crust”.
Crumble sausage on top of egg mix and bake at 350F for 30-35 minutes until eggs are set. Let sit for 5 minutes and serve.wpid-IMAG0048.jpg

    And how did this go? I’m assuming it wasn’t a crispy crust. How did the spinach and sweet potato taste together?

    • We all really like it 🙂 Yes, the crust wasn’t crispy, but it held together and the flavors worked great together. All the other sweet potato recipes I’ve found had more of a hashbrown type crust, which would probably work great but I didn’t want the extra step of baking it first.
      Lately when the boys are hungry, they want food NOW 🙂

  3. I haven’t tried it reheated yet- we devoured the whole thing in one meal 🙂 It should be great the next day!
