Pomegranate, Kale, and Walnut Salad

1/2 pomegranate, seeded
2 cups kale, chopped
1 cup cauliflower, riced (or any rice of your choice)
1/2 cup walnuts
1/4 cup feta


1/2 lemon, juice only
1/2 orange, juice only
1/2 T apple cider vinegar
sea salt and pepper to taste

*Makes 2 salads.  I topped ours with some grilled chicken.  Seriously, this one is delicious!  wpid-IMAG0031.jpg
