Red Curry Meatballs


1# ground beef
2 cloves garlic, crushed
2 T soy sauce
1 T fish sauce
1 tsp ground pepper

2 T red curry paste
1 1/2 cups coconut milk, full-fat
1 T fish sauce
2 T honey
1 T Sriracha or spicy garlic paste of choice

  • Warm up curry paste in large pot (approx. 2 minutes) to bring out the fragrance.
  • Add coconut milk, 1 T fish sauce, sriracha and honey.  Stir and bring to a boil.
  • Form meatballs and drop into curry sauce. I also added a few sliced red and yellow peppers here.
  • Simmer on medium heat until meatballs are cooked through.  (approx. 20 minutes)

Serve on top of spaghetti squash and garnish with fresh basil.
