Seared Tuna with Pears & Fennel Salad

Dressing:

Juice of 1 orange with zest
2 T EVOO
Dash of cayenne
Sea salt and Pepper to taste
1/2 tsp oregano

Salad:

Arugula
1 bulb of fennel, sliced thin
1/4 red onion, sliced thin
1 pear, diced
1/4 cup pecans
A few crumbles of blue cheese (Use the good stuff- it is worth it!)

Top with seared tuna filet and serve.
(Prepare tuna with a little EVOO, sea salt and pepper.  Grill 3 minutes per side.)
