Pumpkin chocolate chip cookies ~ gluten free

Preheat oven to 350°

Mix together the following ingredients in your KitchenAid~
1 1/2 cups almond flour
1 egg
4 T honey
1/2 cup pumpkin puree
2 T butter, melted
1 T pumpkin pie spice
1/2 tsp baking powder
Pinch of sea salt
1 cup mini chocolate chips
1/2 cup chopped pecans (optional)

Bake on parchment lined cookie sheet for 12-16 minutes.
Cool for 10 minutes before eating.

Makes approx. 16 cookies.

Of note:  these are very soft cookies and crumble easily, but they are still very delicious.
