Late summer salad

Salad Ingredients ~

1 1/2 cups uncooked short grain rice (cook according to package)
Handful of fresh parsley, finely chopped
Handful of fresh cilantro, finely chopped
2 cobs of corn, uncooked
24 cherry tomatoes, sliced in half
1 broccoli crown, trees only
1 bunch of green onions, diced

Juice of one lemon
2T red wine vinegar
1/4 cup EVOO
2 cloves garlic, finely minced
Sea salt and pepper to taste


This recipe was modified from original at  It is so simple but full of flavor! It is our favorite way to get some gluten-free carbs before a race or long ride. 

This weekend we are testing it out while camping in Hayward, WI. We are heading north to pre-ride the Chequamegon course. Wish me luck on all those hill repeats 🙂
