Grilled Romaine with Avocado-Lime Dressing

Dressing Ingredients ~
1 avocado
1 lime, juice only
2 T rice vinegar
1 T EVOO
1 clove garlic
1/2 tsp honey
1/4 tsp cumin
1/4 cup water
Dash of sea salt

Blend above in food processor til smooth and reserve.  Add a little extra water to thin out if necessary.

Grilled Romaine~
1 bunch of romaine
1 clove garlic, minced
2 T EVOO
sea salt and pepper

Mix the garlic, EVOO, salt and pepper in small bowl and brush it on both sides of the romaine leaves. Grill for 60 secs on each side.

Drizzle with dressing and top with fresh green onion, cilantro, and fresh pepper. wpid-IMAG1077.jpg

I saw this recipe on thugkitchen.com and had to try it!  Paired with a nice piece of fish and you have yourself a great summer dinner.  Give it a try.
