Taco Pie *Paleo*

What do you do when you are in a pinch and just need something healthy to eat?
Please don’t tell me you call for pizza delivery!

Grab some food out of the fridge and brainstorm!

I couldn’t decide between homemade pizza or tacos.  So I made taco pizza pie, and I have to admit that it was pretty fabulous.

I made this crust in a pie plate. (Only I doubled up on the cauliflower in the recipe.)wpid-IMAG0783.jpg

Then I made this taco meat recipe.

I added the meat on top the pie crust and put it all back in the oven to keep it warm while I chopped up some veggies.  Just turn the oven temp off and keep the door closed.

I had these veggies on hand to work with:
avocado, tomatoes, green pepper, jalapeno, and red onion

Cut into “slices” (it is really a big mess) and top with your favorite salsa.
