Apple Cinnamon Paleo Muffins

2 cups almond flour
1/2 tsp baking soda
1/4 tsp sea salt
2 tsp cinnamon
1 lg apple grated or chopped finely
1 T fresh lemon juice
1/4 cup honey
3 eggs
2 T coconut oil, melted

Preheat oven to 325°F and line muffin tins. (Makes 9)

Mix dry ingredients in large mixing bowl.
Mix all the wet in small mixing bowl and add to dry. Combine well. Fill tins 3/4 full and bake for 20-25 minutes. (Until toothpick comes out clean.)

Great for breakfast or a snack!
