Lemon Blueberry Muffins *Paleo *Gluten-free

Ingredients:

6 eggs
4 T butter, melted
4 T vanilla almond milk, unsweetened
6 T honey
1 tsp sea salt
1/2 tsp vanilla
1/2 tsp baking powder
1/2 cup coconut flour
1/2 cup fresh blueberries
Zest of one lemon

Preheat oven to 400° F

Combine all ingredients but blueberries and mix well.  (Coconut flour tends to be clumpy, so it helps to sift it first.) Fold in blueberries.  Divide batter between 12 prepared muffin tins.  (*approx. 1/4 cup per muffin)

Bake for 15 minutes.
