Chicken Lime Soup



Juice of 3 limes (approx 1/4 cup)
1 1/2# chicken breasts, cooked and shredded (or 1 Rotisserie Chicken)
1 tsp sea salt
1 tsp cracked pepper
1 1/2 tsp oregano
1 lg white onion, diced
4 cloves garlic, minced
1 jalapeno, diced
4 cups chicken stock
1-2 cups water

chopped avocado
crumbled feta
diced cherry tomatoes
crushed tortilla chips
cooked rice (for the kiddos)


Add 1 T EVOO to large pot and saute onion (approx 4 mins).
Add garlic and jalapeno and saute (approx 1 mins).
Add broth, lime juice, oregano, salt and pepper, and shredded chicken.
Bring to boil, cover and simmer for 30 minutes.

Serve hot and add garnishes to top!

It kind of reminds me of the beach in Mexico.  Minus the tequila 🙂
