Grain-Free Granola *Paleo*

One thing I miss most since changing over to paleo, is my homemade granola.  See recipe here:

Today I finally decided to try making a grain-free version.  It was delicious!  (Especially with a little almond milk.)

1 cup chopped pistachios
2 cups raw almond slices
2 cups raw coconut flakes
1 T cinnamon
1 tsp sea salt
Zest of one orange
1/4 cup honey, melted
1/4 cup coconut oil, melted
2 cups dried fruit of choice

Preheat oven to 350.

Mix all ingredients other than dried fruit in large bowl. Stir well to combine flavors.  Place mixture on cookie sheet in thin layer.  Cook for 15 minutes, stirring half way through. (If you don’t like your coconut toasted, add half way through. It tends to burn easily.)

Take out of oven and stir.  Add dried fruit and stir again. Let cool and store in
airtight container in fridge.

  1. Great recipe! I’m trying to find cereal-type food alternatives for my kids now that we are Paleo. This will be a big hit!
