Sun-dried Tomato Chicken

Ingredients:

1 T almond flour
1/2 yellow onion, diced
2 cloves garlic, crushed
1/2 cup sun dried tomatoes, diced
handful of fresh basil
1 cup chicken broth
1/2 cup coconut milk
1 1/2 # chicken breasts

Cook chicken in skillet with EVOO. When cooked through, dice into small pieces and set aside.

Add 1-2T EVOO to large skillet. Cook onions and garlic until softened. Add tomatoes and flour. Whisk to combine. Next add stock and coconut milk. Bring to boil and add chicken. Cover and cook on medium heat for 20 minutes.

Serve over rice. (I served ours on top of baked cauliflower to keep it Paleo.)
