Warm chicken apple spinach salad with pistachios and bacon *paleo*

The dressing:
2 T red wine vinegar
1 T grainy mustard
1/2 lemon, juice only
4 T EVOO
1 T rosemary, finely chopped
sea salt and pepper

Use whisk and combine well. Set aside.

Coarsely chop spinach or Arugula.
Add 1 chopped apple.
Add 1/4 cup pistachios
Add 2 strips of bacon, coarsely chopped.
Add 2 chicken breasts, cooked and coarsely chopped. (I ninja’d mine so it had super small pieces.)

Add dressing and combine all to mix flavors.  Serve immediately.

Serves 3.
