Paleo Fried Rice

1/2 red onion, diced
1 red bell pepper, diced
1/2 yellow bell pepper, diced
1 cup shredded carrots
1/2 cauliflower head, “riced”
2 T sesame seeds
1/2 cup frozen peas
3 eggs
2 T soy sauce or Braggs aminos

Heat EVOO in large pan or wok.  Add onions, peppers, and carrots. Saute til softened.


Add cauliflower “rice” and sesame seeds.  Saute for 5 minutes.


Add peas and soy sauce. Saute for 1 minute.
Make well in center and scramble eggs. 


Mix into veggies and cook through.

Eat alone or as a side dish. 🙂

How do you make paleo rice?
Chop 1/2 head of cauliflower and put in your food processor.
Substitute for rice in paleo dishes.
Yes, it is messy!
