Shrimp and Cashew Curry *Paleo*

Ingredients~
1 T coconut oil
1/2 yellow onion, diced
1 red pepper, sliced
1/2 head of broccoli, crowns only
1 1/2 cups sweet potato, cubed
Sea salt and pepper
1 cup frozen peas
1# frozen jumbo shrimp
1/2 cup chicken broth
2 T curry powder
1/2 cup cashews
Jalapeno, sliced for garnish

Heat coconut oil in large saute pan or wok.

Add onion, pepper, broccoli, sweet potato, sea salt and pepper.  Saute for 5 minutes.

Add broth, curry powder, peas, and stir to combine.  Place frozen shrimp on top and cover.  Cook on medium heat for 10 minutes.

Add cashews and fresh jalapeno at end and serve.
