Chocolate Bacon Cupcakes *Paleo*


2 cups almond butter
2 eggs
1/2 cup raw honey (I buy unfiltered)
1 T vanilla extract
1/4 cup unsweetened cocoa powder
1/2 tsp sea salt
1 tsp baking soda
1 tsp baking powder
1/8 cup coconut milk (full fat)
8 strips of bacon (cooked and chopped)

Preheat oven to 325 degrees.

In mixing bowl or with a hand blender, blend almond butter and eggs til smooth.

Add in honey and vanilla. Mix.

Add in salt, soda, powder and SLOWLY the cocoa.

Add coconut milk.  Mix well.

Fold in chopped bacon pieces and mix well. *I also added a 1/4 cup of dark chocolate chips here. Not paleo…I know.*

Divide batter into muffin tins (Mine made 16 muffins – while using an ice cream scoop to transfer the batter.) and bake for 30-35 minutes or until inserted toothpick comes out clean.
