Paleo Pumpkin Chili

Ingredients:

2# ground grass-fed beef (browned)
2 sweet potatoes, cubed
1 cup mushrooms, finely diced
1 cup shredded carrots
1 large bell pepper, diced
1 yellow onion, diced
1 lg can diced tomatoes (28 ou)
1 lg can pureed tomatoes (28 ou)
1 cup chicken or beef broth (more if needed to thin sauce)
1 can pumpkin puree
1 T cumin
1 T cayenne
3-4 T chili powder
Sea salt and pepper to taste
1 T oregano
2-3 cloves garlic, finely diced

Mix all ingredients and put in crockpot.  Cook on low for 8 hours. It may take less time, but I threw
it in the crockpot before bed and woke up to the bubbly goodness in the morning.  🙂
*This makes a very full crockpot!*

I topped it with diced avocado and fresh jalapeno slices.  A little shredded cheddar would be great, but I am trying to stick with the paleo until the end of the month or Halloween eve anyway.  Come on…the kids can’t eat all that candy alone!
