Paleo Stuffed Peppers

4 large bell peppers, tops removed and cored
1# ground beef (grass-fed if possible)
1 cup finely chopped carrots
1 cup finely chopped mushrooms (I used baby bellas)
1/2 red onion finely chopped
1 T oregano
1/2 T cayenne pepper
Sea salt and ground pepper
1 large can crushed tomatoes
1 large can pureed tomatoes
(It is preferable to use pure tomatoes, no sugar added or other junk.)

Mix ground beef, carrots, onions, mushrooms and spices in bowl. Combine well to mix flavors. Stuff peppers with beef mixture. I had enough for 4 large peppers and one extra medium-sized meatball. Place the stuffed peppers (and extra meatball if you have one) in large pot. Pour tomato sauces over the top. Cover and bring to a boil. Set to medium heat and cook for 45-60 minutes or until meat is cooked through to liking.

*Bonus…even the boys loved these and I tricked Rowan in to eating a food that contained mushrooms 🙂
