Apple cider pulled pork

This is a great Fall variation to the pulled-pork sandwich.  The cider really adds a sweetness to the meat. I just add all the ingredients in the slow cooker in the morning and let it simmer all day…

Ingredients:

1 pork loin
1 1/2 cups apple juice (100% juice)
1/2 cup cider vinegar
2 T spicy brown mustard
3 cloves garlic, crushed
1 T crushed red pepper
1 tsp paprika
1 tsp sea salt
1 tsp ground black pepper

Serve alone or on top of a toasted bun with sweet pickles, cilantro, and fresh red onion slices.
