Baked Blueberry Lemon Donuts/Muffins


Have you ever heard of a donut pan?  Me either!  But they make them and now I want one.

I was searching for a donut recipe for Father’s Day morning and came across this one for baked donuts:

Preheat oven to 325

1 cup whole wheat flour
1/3 cup raw sugar
3/4 tsp baking powder
3/4 tsp baking soda
1/4 tsp salt

1 egg
1/2 cup plain Greek yogurt
Zest of 1 lemon
1 cup fresh blueberries

Mix wet and dry ingredients.  Scoop into greased donut pan and bake for 10 minutes.
*Clearly I don’t own a donut pan, so we made “Do-uffins”!  This recipe made approx. 9 muffins. I baked them for 15 minutes, or until inserted toothpick came out clean.

I made a little glaze for the top with powdered sugar, juice of half a lemon, and a splash of milk.

These were yummy, but I have a feeling the donuts would be GREAT!
