My BIG Fat Greek Salad


Mixed greens or butter lettuce
Red onion, diced
Cucumber, diced
Tomato, sliced
Avocado, sliced
Kalamata olives, sliced
Sauteed garbanzo beans
Grilled chicken
Fresh squeezed lemon juice (I used 1/2 for two salads)
Drizzle of EVOO

Combine all ingredients other than chicken, lemon, and oil.

Squeeze fresh lemon over salad and drizzle with EVOO.  Top with chicken pieces.

* Saute 1 can of garbanzo beans in 2 T EVOO with fennel, sea salt, and ground pepper until browned and crispy on outside.  Approx 5-7 mins.
