Summer Lobster Chop Salad

Ingredients~

4-6 red potatoes, cooked and sliced thin
1/2 cup frozen peas, thawed
2 hard-boiled eggs, sliced
3-4 lobster tails, cooked and chopped
mixed greens
12 cherry tomatoes, halved
3 red radishes, thinly sliced

Dressing~

1 shallot, minced
1/4 cup white wine
1 T Dijon mustard
1/4 cup EVOO
sea salt and pepper
*Mix above well and drizzle over top salad.
