Serving Up some Breakfast Muffins!


1 1/4 cup whole wheat pastry flour
1/2 cup brown sugar
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp cinnamon
1/2 tsp sea salt
1 cup rolled oats
1/2 cup raisins
1 egg
1/3 cup skim milk
1 cup shredded carrots
1 ripe, mashed banana

Preheat oven to 400F
Grease 12cup muffin tin with coconut oil or cooking spray.  (I prefer coconut oil over spray oil.  The spray stuff just doesn’t seem like it should be ingested.)

Mix together flour, sugar, soda, powder, cinnamon and salt in large bowl.  Add oats and raisins next.  Stir.  Add the rest of the ingredients and stir to combine.  Batter will be thick.

Scoop 1/4 cup of batter in each muffin tin.  Bake for 22-25 minutes.. Serve warm or cold.
