Blueberry & Oatmeal Pie Pancakes

1 cup blueberries
1 cup whole wheat pastry flour
6T rolled oats
1 tsp cinnamon
2 1/2 tsp baking powder
1/4 tsp salt
1 1/2 tsp vanilla
2 T raw sugar
1 cup milk

Mix all ingredients in bowl and fold in blueberries at the end.

Heat skillet and add 1 T coconut oil (or any other oil).
Pour 1/4 cup of batter for each pie-cake.
Makes 8 pie-cakes or 4 servings.

These are so yummy and filling.  I always serve mine with a few over-easy eggs and some fresh fruit on the side.
