Sauteed spinach with sweet potatoes and salmon

This is one of those thrown together meals made in just a few minutes with what was already at home and turned out delicious.  I was going with the Joey theory—>
“I like it.  Custard good.  Jam good.  Meat good.”

Okay, so my meal didn’t contain custard, jam, or meat.  It did, however, combine a bunch of my favorite things.  You get the idea, right?!

Here is what I had on hand to work with:  spinach, pine nuts, lemon, EVOO, sweet potatoes, salmon, and wheatberries.

Here is what I made:  
Sauteed spinach (in EVOO) with crushed garlic, lemon juice (1/2 of lemon), pine nuts, and cherry tomatoes.

Topped with wheatberries and roasted sweet potatoes.

Topped with a salmon filet (cooked with EVOO, sea salt and pepper, a squeeze of lemon juice, and topped with fresh parsley).

Sometimes you just have to go with what you know tastes good and trust your instincts that the combined flavors will all work out in the end.

Try to think outside the box tonight when you make dinner and let me know what you’ve created.  Hopefully it doesn’t turn out like Rachel’s trifle did 🙂
