Stuffed Baguette

Ingredients~

1 baguette (approx. 12-14inches)
8 ounces cream cheese
4 ounces goat cheese
1 clove garlic, crushed
1/2 cup red bell pepper, diced
1/2 cup sun-dried tomatoes in EVOO, diced
1/4 cup kalamata olives, diced
2 ounces spicy salami, diced
handful of fresh Italian parsley, chopped
Sea salt and Pepper to taste

Combine cream cheese and goat cheese in mixer until smooth.
Add in all of the above ingredients and stir to combine.

Cut the ends of your baguette and hollow it out with a sharp knife.

Stuff the baguette with the cheese mixture.
(I found it easiest to cut the baguette in half and stuff from both ends.)
Wrap in plastic wrap and refrigerate for 2 hours.

Slice in 1/2-1 inch slices and serve!
