Key Lime Pie “Larabars”

I love Larabars.  I love that they contain simple ingredients, fruits, and nuts.  No gluten.  No dairy.  No nonsense.

A friend of mine (Thanks Teri!!) sent me a link to this website:

I tried the Key Lime Pie version.  Simple.  Limey. (yes, that is a word!)  Goodness.


1 cup raw cashews
1 1/2 cups chopped, pitted dates
zest of 1 lime
juice of 1/2-1 lime (I used 1 lime, but next time will try 1/2)
dash of sea salt
2/3 cup raw coconut

Add dates to food processor- blend until becomes paste like and set aside.
Add cashews to food processor- pulse and chop and set aside with dates.
Add raw coconut flakes to food processor- chop finely and add to above.

Next add sea salt, lime zest and juice.  Mix together with hands.  Use your hands to form into “bars” or balls and place on plastic wrap.  Wrap them up and refrigerate.  Wait at least 20 minutes for the bars to set before you eat one.  Recipe yielded 7 “bars”.

Now I need to try all the other delicious recipes!  🙂  Happy dance!
