Overnight hoison-ginger pork wraps

Before you go to bed, put the following in your crock pot:

Pork roast
1-2 T ginger root, minced
2 cloves garlic, crushed
1 T chili garlic sauce
3 T hoison
1/2 cup of water
* I put my crock pot on high and wake up in the morning to fresh pulled pork roast.  Place in bowl and refrigerate.

Before you go to bed, combine the following in a small bowl:

2 T rice vinegar
1/4 cup EVOO
1/2 tsp soy sauce
1/2 T raw sugar
*stir, cover and refrigerate.

When it is time for dinner do the following:

1)  Heat shredded pork.

2)  Combine the following with above vinegar sauce:
one bag of shredded cabbage (I buy the one with shredded carrots mixed in too)
3/4 cup peanuts
handful of cilantro
4 green onions, chopped

3)   Combine all of the above on a whole wheat tortilla and wrap it up!  Super simple and delicious.  (I had left over pork and cabbage that made a great salad the next day for lunch too.)
