Homemade Pasta Experiment

So, Ryan and I have been talking about making our own pasta for the past few years.  For our 9th wedding anniversary, one of my gifts was a pasta guitar.  Ryan always gets me the year appropriate gift.  Year 9 gift is leather (I also got a new wallet), and ceramic or gifts for the home.

2 cups unbleached whole wheat flour
3 eggs
1/2 tsp salt

Pour flour onto countertop and make a well in the center.
Add 3 eggs.
Carefully beat the eggs without incorporating too much flour.
Slowly add the flour to the egg mixture. (This was tricky and not pretty, but it worked!)
Kneed the dough until smooth and form into ball.
Start a large pot of water with salt added and bring to rapid boil.
Separate into 3 balls and cover with wet towel or bowl.  Let rest for 15 minutes. 
Using one ball at a time, roll the dough until very thin.
Place on top of pasta guitar and using pressure, roll over dough with rolling-pin.
Once all the pasta is cut, add to boiling water and cook for 3-5 minutes.

I added 1 T butter, fresh grated parmesan and fresh grated Gruyère cheese to the hot noodles.  These were great!  I served them with baked stuffed peppers.  See recipe here.
