Stuffed Peppers with Turkey and Quinoa

Here is what you’ll need~

1# ground turkey
1/2 yellow onion, diced
1-2 cloves garlic, crushed
1 tsp sea salt
1 tsp ground pepper
1 tsp cumin
1 tsp garlic powder
8 ounces tomato sauce
1/2 cup chicken broth
1 1/2 cups cooked quinoa
3-4 bell peppers, halved and seeds taken out
1/2 cup shredded cheddar cheese 

In pan with a splash of EVOO, add onions and garlic.
Cook until onions are mostly softened.
Add ground turkey and spices.
Cook until turkey is cooked through.
Add tomato sauce and simmer for 5 minutes.
Preheat oven to 400.

Mix quinoa and turkey mixture.
Place peppers skin side down in 9X11 pan.
Fill peppers with turkey/quinoa mix.
(I used 3 peppers and had some mix left that I just reserved for left-overs.)

Add 1/2 cup chicken broth to bottom of pan and cover with foil.
Cook for 40 minutes.
Top with a little shredded cheddar cheese and serve.

We made some homemade pasta with ours.  It was great!
