Over-night French Toast Strussel

This is one of those not-so-healthy recipes that I just had to share.  I am a firm believer in treating my kids to one or two yummy breakfasts on the weekends!  Here was Saturday mornings treat—>

Strussel:
1/4 cup whole wheat flour
3 T brown sugar
1/2 tsp cinnamon
1/8 tsp salt
1/4 cup butter (room temp and cut into tiny pieces)

*Using fork, mash the above in small bowl to combine.  Cover and refrigerate until morning.

The Toast:
1 loaf French bread, broken into tiny pieces
4 eggs
1 1/4 cup unsweetened almond milk (or any milk)
3 T raw sugar
1 T vanilla extract

*Coat bottom and sides of baking dish.  Place bread pieces to fill.  Combine eggs, milk, sugar and vanilla- whisk to combine.  Pour egg mixture over bread pieces and then stir to coat all pieces.  Cover and put in fridge over-night.

*In morning pre-heat oven to 350.  Stir bread pieces one more time.  Evenly sprinkle strussel mix over the top.  Bake for 40-45 minutes.  Serve with a little maple syrup on top!
