Ginger, Peanut Noodles with Chicken

This is a two for one recipe.  You can either make this into a great salad or an amazing pasta dish.  I decided to give my boys the pasta version and make Ryan and I an awesome Thai-inspired salad.  The key ingredient is the sauce (or dressing).  You will need this for both recipes.

Ginger-Peanut Sauce

1/2 cup peanut butter
1 cup water
3 T rice vinegar
3 T soy sauce
1 T raw sugar
1 tsp grated ginger

Blend in food processor or blender until smooth.   Reserve.

Recipe 1-  Ginger and Peanut Noodles with Chicken

Cook noodles as directed by package.
Add cooked chicken.
Toss in some veggies- red onion, pea pods, carrots.
Spoon some sauce on top and serve.
Kid Approved 🙂

Recipe 2- Thai Chicken Salad with Peanuts

Chop up some romaine lettuce.
Add some veggies- red onion, cukes, pea pods, carrots, sprouts.
Top with some chicken pieces.
Sprinkle with peanuts.
Add a little siracha or chili paste to sauce.
Spoon on top of salad and serve.
