Okay, I will admit it. I am addicted to Pinterest! BUT, how can’t I be when I find amazing recipes like this one from http://smashedpeasandcarrots.blogspot.com/ ~
Energy Bite Balls
1/2 cup peanut butter
1 cup oatmeal
1/3 cup honey
1 cup coconut flakes
1/2 cup ground flaxseed
1/2 cup mini chocolate chips
1 tsp vanilla
Mix all ingredients in bowl. Make sure to incorporate all the yummy goodness.
Put it in the refrigerator for 1 hour.
Form into balls. (Makes about 12-14) I used an ice cream scoop!
These will keep in the fridge for 1 week. BUT there is no way you will be able to keep your hands off them. THESE are great! I can’t wait to use them on long bike rides or runs this summer. I am pretty sure my kids (and Ryan) would finish the whole container if I let them 🙂 Okay, I can’t keep my hands off them either.
