No bake, Energy Bites

Okay, I will admit it.  I am addicted to Pinterest!  BUT, how can’t I be when I find amazing recipes like this one from http://smashedpeasandcarrots.blogspot.com/ ~

Energy Bite Balls

1/2 cup peanut butter
1 cup oatmeal
1/3 cup honey
1 cup coconut flakes
1/2 cup ground flaxseed
1/2 cup mini chocolate chips
1 tsp vanilla

Mix all ingredients in bowl.  Make sure to incorporate all the yummy goodness.
Put it in the refrigerator for 1 hour.
Form into balls. (Makes about 12-14)  I used an ice cream scoop!

These will keep in the fridge for 1 week.  BUT there is no way you will be able to keep your hands off them.  THESE are great!  I can’t wait to use them on long bike rides or runs this summer.  I am pretty sure my kids (and Ryan) would finish the whole container if I let them 🙂 Okay, I can’t keep my hands off them either.

    What kind of peanut butter did you use? I made them last night, but they didn’t stick together real well (Smuckers Natural PB). They are still good, just need a spoon. Maybe I just need to add a little more PB.

    • Jif Natural is what I usually buy.

    • Ok, I needed PB and bought some Smuckers Natural. I also needed some energy bites 🙂 I tried them with this PB and you are right—very difficult to ball. I used a lot of force on the first couple and then decided to add a splash of water. It worked much better after I added just a splash of water to make the ingredients slightly moist. They do turn out much better with the Jif natural, but taste the same either way.
      I also didn’t have any choco chips in the house and decided to substitue for Heath toffee chips—>YUM!

  6. Ann, I just made these with 1/4 cup PB and 1/4 nutella, and added craisins—> choco heaven!

      I’m going to have to try that. I LOVE nutella. I buy a jar of it and hide it from Henry’s sight just so I can eat big spoonfuls of it when he goes to bed (bad mom).
