Meatless Monday

I said I was going to try to make one day a week vegetarian.  TODAY was the day.

Kim meets Meatless Monday!

Breakfast (You still can call it breakfast if you woke up at 3pm, right?!)—>

1/3 cup PB
1/2 cup milk
1 banana
1 cup spinach

Lunch/Dinner (Working night shift really screws up your meals and exercise routine, but that is a whole other post!)—>

QUINOA-BLACK BEAN burgers with sweet potato “fries” and broccoli:

see burger recipe here!My “snacks” at work will be another Quinoa Burger with left-over broccoli, a “cutie”, and a piece of string cheese.

First attempt at a full day of vegetarian= SUCCESS!  *PS even the kids LOVED the burgers- we didn’t tell them they weren’t made with meat 🙂
