Here is why pinterest is not another time-suck~ I find awesome recipe ideas like this!
Cheesy Quinoa Cakes
2 cups cooked Quinoa
2/3 cups grated fontina cheese
3T whole wheat flour
2 green onions, chopped
1 egg, lightly beaten
salt and ground pepper to taste
dash of cayenne pepper
Place all ingredients, except EVOO, in bowl and mix to combine.
Let sit for 5 minutes.
Heat EVOO (approx 1-2 T) in pan on medium-high heat.
Pour 1/4 cup of quinoa mixture and place in heated pan.
Cook for 5 minutes per side until outside is crispy.
Serve with aioli.
Here are what mine looked like—>*I substituted yellow onion for green onion. (I just didn’t have any at home when I decided to make these.) I made the aioli, which the boys loved!, but Ryan and I didn’t think it needed it. The flavor was great on its own and we aren’t a huge fan of mayo based sauces. The boys, however, thought the aioli had “such good flavor” that they needed it on everything, including the salmon! 🙂
