a crockpot 🙂
4 large green bell peppers (or red bell peppers)
2 cups cooked brown rice (I use TJ’s pre-cooked version.)
1 large can of diced tomatoes
1 small can of tomato sauce
1 can of tomato soup
1 pound ground beef
sea salt & pepper to taste
1 T dried parsley
1 T dried oregano
1 tsp red pepper flakes
Combine ground beef, rice, and spices in bowl.
Cut out the insides of green peppers and stuff with the beef mixture.
Cook on high for 6 hours. (All crockpots cook differently…mine will only cook anything on high heat so that is all I use. I put these in at noon and we ate at 6pm. They were perfect!) I also like to put a little fresh parmesan on top prior to serving.
Make a quick chopped salad and dinner is done!
