Chopped salad

Here is what you need~

1-2 heads of romaine lettuce, chopped into bite size pieces
2 cobs of corn (cooked and kernels removed)
1/2 red onion, diced
12 cherry tomatoes, sliced in half
4 strips of bacon, cooked and chopped into tiny pieces
1/4 cup fresh parmesan cheese
2 T EVOO
1 T balsamic vinegar

Chop all ingredients into tiny pieces and toss with oil and vinegar.  

This is one salad my kids LOVE too.

* I am not a fan of left-over salad because it usually gets soggy, BUT this one actually stays crunchy through lunch the next day. BONUS!
