CHOCOLATE PUMPKIN BARS (or cookies)

INGREDIENTS

1 1/2 cups raw cane sugar
1 egg
2 1/2 cups unbleached white whole wheat flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp sea salt
1/2 cup unsalted butter
1 tsp cinnamon
2 cups pumpkin puree (use 1 cup for making cookies)
1 tsp vanilla
1 cup chocolate chips
1 cup pecans or walnuts

Cream together butter, sugar, and egg.

Sift flour, baking powder, baking soda, salt, and cinnamon.

Gradually add flour mixture to creamed mix.
Add pumpkin, chocolate chips and nuts.  Stir to combine.

Bake at 350 in 9X13 pan for 25-30 minutes or until toothpick comes out clean.
If making cookies, check after 15 minutes.

*I realize that chocolate chips are not part of the unprocessed challenge, but sometimes a girl just needs some chocolate 🙂  You could substitute dates or unsweetened raisins for the chocolate chips if you wanted to be 100% unprocessed.
