Pumpkin yogurt pancakes *unprocessed*


  • 1 cup whole wheat pastry flour
  • 1/3 cup skim milk
  • 1 egg
  • 3/4 cup plain Greek yogurt 
  • 2 tsp raw sugar
  • 1/4 cup pumpkin puree
  • 1 tsp vanilla bean paste (or vanilla extract)
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp cinnamon 

Beat egg, add all other ingredients, stir until just combined. Cook 1/4 cup batter servings on a medium hot griddle.  (I used coconut oil on the griddle.)

Makes about 2-3 servings.  I doubled the batch for my family of 4 and had only 4 pancakes left-over.  (They did reheat well the next day.)

These pancakes are the best I ever had!  I normally don’t even like pancakes or eat them when we make them for the kids for breakfast.  I ate 4 of these babies…must have been the pumpkin 🙂
