Chicken Cacciatore- unprocessed


1 box of Quinoa pasta (cook per instructions on package)
1 med yellow onion, chopped
1 bell pepper, chopped
1 jalapeno or hot banana pepper, sliced
3 cloves garlic, minced
1 16 ounce box/can of chopped tomatoes (ingredients must be tomatoes nothing else)
2 T balsamic vinegar
1/4 cup red wine (sulfite free to stay “unprocessed”)
handful of fresh basil, torn
handful of fresh parsley, chopped
2 tsp oregano
sea salt and ground pepper to taste
1 pound chicken breasts, cut into small pieces

In large pan heat EVOO, saute onions, peppers and garlic until softened.  Add tomatoes, wine and vinegar.  Heat to boil and then turn to simmer.  Add chicken pieces and cover. Let simmer for 20 minutes or until chicken is cooked.  Add herbs, salt and pepper.  Stir to combine ingredients and serve over cooked pasta.  Top with fresh grated parmesan cheese.
