One of my favorite flavors of Fall is pumpkin. Pumpkin cookies, pumpkin chili, pumpkin parfait- Yes please!
Pumpkin Yogurt Parfait
1 cup Greek yogurt
1/2 cup canned pumpkin(unsweetened, unflavored)
3/4 tsp pumpkin pie spice
2T pure maple syrup (I only used 1T)
1/2-1 cup granola
Layer yogurt mix and granola in dish and serve immediately. You can make the yogurt ahead of time, but the granola will get soggy if it sits too long. I made double the amount of yogurt mix so I could enjoy it again tomorrow.
