Cashew chicken

1# chicken breasts
1 egg  white
1 tsp soy sauce
1/2 tsp white pepper
(combine above in bowl, cover, and refrigerate for 20 minutes)

1 cup raw cashews
1 T EVOO or sesame oil
(heat oil in wok and stir-fry cashews until golden brown- about 1 minute, remove and drain on paper towel)

Put chicken mix in wok, stir-fry until chicken is white throughout and remove from wok. 

1 T corn starch
1 T soy sauce
1 T cold water
(combine above in small bowl and reserve)

1 medium yellow onion, chopped
1 tsp fresh ginger, finely diced
1 bunch green onions, chopped
2 T EVOO or sesame oil
(heat oil in wok, stir-fry above for 1-2 minutes) 

1 bell pepper, sliced
1 cup broccoli
1 cup bamboo shoots
1 Habanero pepper, finely chopped with seeds (if you like it hot)
(Add above veggies and stir-fry for 2-3 minutes)

Add chicken and 2 T hoison sauce and stir-fry for 1 minute.

1/4 cup chicken broth
(Add chicken broth and heat to boiling.  Next add the cornstarch mix from above and stir until combined.)

Add cashews at the end and eat!
