Chopped salad

Ingredients:

Romaine lettuce                                 
Tomatoes x2
Cucumber
Fresh sweet corn x1 cob
Green pepper
Hot banana pepper
Avocado
Handful of fresh herbs (I used basil and parsley)
Fresh crumbled blue cheese

Dressing:

1T Dijon mustard
3T EVOO
juice of 1 lemon
sea salt and pepper to taste

Chop everything into tiny pieces and mix gently.  Toss with salad dressing and top with chicken or fish.

    Another dressing for this is
    2 Tbsp Braggs Apple Cider Vinegar
    2 Tbsp Braggs Amino Acids
    2 Tbsp EVOO
    1 tsp minced garlic

    (or lately, instead of plain EVOO and garlic, I just use Garlic EVOO from Costco.
