Tabouli salad


1 cup bulgur wheat
1 cup hot water
1/2 lemon- juice only
1/2 cucumber, diced
1-2 tomatoes, diced
sea salt and pepper to taste
1 cup fresh parsley, finely chopped
1/2 cup fresh mint, finely chopped


In medium bowl, pour hot water over bulgur wheat, cover and place in fridge for 30-45 minutes.  (Until wheat is tender and water is absorbed.)

Add chopped herbs, EVOO, lemon juice, salt and pepper.  Gently fold in tomatoes and cukes.   Serve chilled.
