Grilled shrimp and pineapple salad

Salad Ingredients:

1 # shrimp
1 fresh pineapple
mixed greens
goat cheese
red onion
hot banana pepper


Take a few cubes of fresh pineapple and puree in food processor.  Add EVOO (1-2 T), 1 tsp cayenne pepper,  1 clove garlic, sea salt and ground pepper and process until smooth.

Place shrimp on skewers.  Drizzle with EVOO, sea salt, pepper, and cajun seasoning blend. Grill 3-4 minutes per side, until fully cooked.

I also grill 2 slices of fresh pineapple.  Drizzle with EVOO, sea salt and pepper.  Just place them on the grill with the shrimp.
